Ingredients
  

  • 3/4 cup plain Greek yogurt preferably 2% or whole-milk
  • 2 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey or maple syrup
  • 1 small clove garlic finely grated
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 to 4 tablespoons cold water as needed

Method
 

  1. Whisk Greek yogurt, lemon juice, Dijon, honey, grated garlic, onion powder, salt and pepper in a medium bowl until completely smooth.
  2. Pour in olive oil in a thin stream while whisking continuously. Whisk 30 seconds more, until glossy with no oil pooling at the edge.
  3. Whisk in 2 tablespoons cold water, one tablespoon at a time. Add more water only 1 teaspoon at a time until the dressing pours in a steady ribbon.
  4. Let the dressing stand 5 minutes, then whisk again so the garlic and seasonings distribute fully.
  5. Add salt by the pinch, lemon by the teaspoon or honey by the half-teaspoon as needed. Serve immediately or chill and readjust with water before using.
