Slow Cooker Lemon Garlic Chicken Recipe

Ingredients
  

  • 2 pounds boneless skinless chicken breasts fully thawed, 4 similar-size pieces
  • 1 teaspoon kosher salt divided
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium shallot finely chopped
  • 5 cloves garlic minced
  • 1 1/2 cups low-sodium chicken broth divided
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary crushed
  • 2 tablespoons cornstarch use only as needed
  • 1/4 cup fresh lemon juice
  • 1 teaspoon finely grated lemon zest yellow layer only
  • 2 tablespoons unsalted butter cold and cubed
  • 1/4 cup flat-leaf parsley chopped

  • 4- to 6-quart slow cooker
  • Dedicated raw-meat cutting board

Method
 

  1. Pat fully thawed breasts dry, halve an unusually thick piece horizontally and season with 3/4 teaspoon salt and pepper.
  2. Add oil, shallot, garlic, 1 cup broth, thyme, oregano and rosemary to a 4- to 6-quart slow cooker.
  3. Place chicken in one layer with minimal overlap, spoon broth over exposed surfaces and cover.
  4. Cook on high 2 to 3 hours, beginning checks at 1 hour 45 minutes for thin pieces.
  5. Remove each breast when its thickest center reaches 165°F. Rest on a clean plate for 5 minutes.
  6. Boil cooking liquid in a saucepan for at least 1 minute. Whisk cornstarch with remaining cool broth and add gradually until sauce lightly coats a spoon.
  7. Remove from heat. Add lemon juice and adjust salt; whisk in cold butter, then zest and parsley without returning to a boil.
  8. Slice rested chicken across the grain and spoon warm lemon garlic sauce over it.

Notes

  • Use fully thawed chicken and remove each piece at 165°F.
  • Do not slow-cook lemon slices or white pith.
  • Add fresh juice, zest, butter and parsley after heat is off.
  • Boil raw-chicken cooking liquid before serving it as sauce.
