Ingredients

  • 1 large ripe pear cored and chopped
  • 1 small frozen banana sliced
  • 3/4 cup plain Greek yogurt
  • 3/4 cup milk of choice plus more as needed
  • 1/4 cup old-fashioned rolled oats
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon maple syrup optional

Equipment

  • High-speed blender
  • Chef's knife
  • Measuring cups
  • Two glasses

Method

  1. Wash the pear, remove the core and chop it into pieces that fit easily under the blender blades. Peeling is optional.
  2. Add milk and yogurt to the blender, followed by pear, oats, lemon, cinnamon, ginger, vanilla and frozen banana.
  3. Start on low for 10 seconds, then blend on high for 45 to 60 seconds until no oat or pear pieces remain.
  4. Let the smoothie stand 30 seconds. Add milk 1 tablespoon at a time if too thick, or a few more frozen banana slices if too thin.
  5. Taste before adding optional maple syrup; a fully ripe pear may provide enough sweetness.
  6. Pour into two glasses and serve promptly while the texture is cold and aerated.
