Ingredients
  

  • 1 tablespoon full-fat cream cheese softened
  • 1/3 cup granulated sugar 67 g
  • 3 tablespoons unsweetened black sesame paste 48 g, stirred well
  • 3/4 cup whole milk 180 ml
  • 1/2 cup heavy cream 120 ml

Method
 

  1. Whisk the softened cream cheese and sugar in a medium bowl until evenly combined.

  2. Add the black sesame paste and whisk until smooth and glossy.
    3 tablespoons unsweetened black sesame paste
  3. Gradually whisk in the whole milk. Stir in the heavy cream just until combined; do not whip.
    3/4 cup whole milk, 1/2 cup heavy cream
  4. Pour into a 16-ounce CREAMi pint without exceeding the MAX FILL line. Cover and freeze level for at least 24 hours.
  5. Install the pint in the machine according to the manufacturer's directions and run the Ice Cream program.
  6. If the mixture is powdery, run Re-Spin once. If it remains crumbly, add 1 tablespoon whole milk and Re-Spin again.
  7. Serve immediately in chilled bowls.

Notes

  • Use unsweetened black sesame paste, not a sweetened sesame spread.
  • Stir the paste thoroughly before measuring.
  • Do not process a pint with a severely uneven frozen surface.
  • Use the fewest Re-Spin cycles necessary.
