Ingredients

Salad
  • 2 15-ounce cans cannellini beans rinsed and drained, about 510 grams drained
  • 1 small fennel bulb very thinly sliced, about 200 grams
  • 1 cup roasted red pepper strips well drained and blotted, 150 grams
  • 3 packed cups baby arugula 90 grams
  • 1/2 cup fresh basil leaves loosely packed and torn, 20 grams
  • 1/3 cup walnuts toasted and chopped, 40 grams, optional
Lemon-shallot vinaigrette
  • 1 tablespoon shallot minced, 15 grams
  • 1 teaspoon finely grated lemon zest
  • 1/4 cup fresh lemon juice 60 grams
  • 1 teaspoon Dijon mustard 5 grams
  • 1 teaspoon maple syrup 7 grams
  • 1 small garlic clove finely grated
  • 1/3 cup extra-virgin olive oil 72 grams
  • 3/4 teaspoon fine salt plus more after tasting
  • 1/4 teaspoon black pepper

Equipment

  • Colander
  • Clean kitchen towel
  • Chef's knife or mandoline
  • Cutting board
  • Large mixing bowl
  • Whisk
  • Two broad salad spoons

Method

  1. Rinse cannellini beans until runoff is clear, drain 2 minutes and blot gently on a clean towel.
  2. Remove stalks, outer layers and core; slice the bulb crosswise about 1/8 inch thick.
  3. Drain and blot roasted pepper, then cut into bite-size strips.
  4. Combine shallot, lemon zest and juice, Dijon, maple syrup, garlic, salt and pepper; rest 5 minutes, then whisk in oil.
  5. Fold beans, fennel and roasted pepper into vinaigrette and rest 20 minutes.
  6. Taste a bean with fennel and adjust lemon by the teaspoon, salt by a pinch or oil by the tablespoon.
  7. Immediately before serving, lift arugula and torn basil through the bean base without compressing leaves.
  8. Scatter toasted walnuts over the salad after tossing.
