Ingredients

  • 1 pound 93% lean ground turkey cold
  • 1/3 cup plain breadcrumbs
  • 1/4 cup finely grated Parmesan
  • 1 large egg beaten
  • 3 tablespoons finely grated yellow onion with its juice
  • 1 clove garlic finely grated
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon olive oil for the basket or meatballs

Equipment

  • Air fryer
  • Instant-read thermometer
  • Mixing bowl
  • Small scoop

Method

  1. Preheat the air fryer to 380°F for 3 minutes and lightly oil the basket.
  2. Combine breadcrumbs, Parmesan, egg, onion, garlic, parsley, oregano, salt and pepper. Add turkey and fold just until evenly mixed.
  3. Form 16 meatballs, about 1 1/2 inches each. Keep them loose rather than firmly compressed.
  4. Set meatballs in one layer with space for airflow; cook in batches if needed.
  5. Air fry 8 minutes, turn, then cook 2 to 4 minutes more.
  6. Check the center of several meatballs for 165°F. Rest 5 minutes before serving.

Notes

  • Read relevant ingredient labels and the manual for any appliance used.
  • Begin checking at the early end of the time range.
  • USDA lists 165°F for ground poultry and advises thermometer placement in the thickest area.
