Ingredients
  

  • 1 pound ground turkey preferably 93% lean
  • 2 tablespoons finely grated yellow onion
  • 1 tablespoon mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon Diamond Crystal kosher salt or 1/2 teaspoon fine salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon olive oil or avocado oil
  • 4 burger buns and desired toppings for serving

Method
 

  1. Preheat the air fryer to 375°F for 3 minutes if recommended. Lightly oil the basket.
  2. Combine onion, mayonnaise, Worcestershire, Dijon, spices, salt and pepper in a medium bowl.
  3. Fold in the cold ground turkey only until the seasonings are evenly distributed.
  4. Shape four equal patties 1/2 to 3/4 inch thick. Make a shallow center indentation and lightly oil both sides.
  5. Arrange the patties in one uncrowded layer and cook at 375°F for 6 minutes.
  6. Turn and cook for 5 to 7 minutes longer, removing each burger when its center reaches at least 165°F.
  7. Rest for 3 minutes, then assemble on buns with desired toppings.

Notes

  • Use 93% lean turkey for a useful balance of moisture and structure.
  • Mix gently and make a shallow center indentation in each patty.
  • Do not stack or crowd the basket.
