Ingredients

  • 3 1/2 pounds boneless beef chuck roast cut into 2 large pieces
  • 1 1/2 teaspoons kosher salt divided
  • 1/2 teaspoon black pepper
  • 2 tablespoons neutral oil
  • 1 large yellow onion cut into wedges
  • 4 cloves garlic chopped
  • 2 tablespoons tomato paste
  • 2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 1/2 pounds small Yukon Gold potatoes
  • 5 large carrots cut into 2-inch pieces
  • 3 tablespoons cornstarch mixed with 3 tablespoons cold water

Equipment

  • 6-quart electric pressure cooker
  • Tongs
  • Wooden spoon
  • Slotted spoon
  • Whisk

Method

  1. Select sauté, heat oil and brown the seasoned roast pieces on all broad sides in batches; transfer to a plate.
  2. Cook onion briefly, add garlic and tomato paste, then pour in broth and scrape every browned bit from the bottom. Cancel sauté.
  3. Add Worcestershire, thyme and beef. Lock the lid and cook at high pressure for 60 minutes, then allow a 15-minute natural release.
  4. Release remaining pressure safely. If a fork does not twist easily, cook 10 minutes more at high pressure with another natural release.
  5. Transfer tender beef to rest. Add potatoes and carrots, lock the lid and cook at high pressure 4 minutes, then carefully quick-release as the manual directs.
  6. Remove vegetables, stir slurry into liquid and simmer on sauté until lightly thickened. Slice beef across the grain and serve with gravy.

Notes

  • Read ingredient labels and the manual for any appliance used.
  • Begin checking at the early end of the range.
  • Follow the pressure cooker's manual for liquid, fill limits and safe release; reheat leftovers to 165°F.
