Ingredients

  • 1 1/2 pounds medium carrots
  • 1 tablespoon avocado oil or olive oil
  • 1/2 teaspoon Diamond Crystal kosher salt or 1/4 teaspoon fine salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon unsalted butter melted
  • 1 1/2 tablespoons honey
  • 3/4 teaspoon garlic powder
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon chopped flat-leaf parsley optional

Equipment

  • Air fryer
  • Vegetable brush
  • Sharp chef's knife
  • Cutting board
  • Mixing bowl
  • Silicone-tipped tongs

Method

  1. Preheat the air fryer to 385°F if recommended. Scrub, dry and optionally peel the carrots.
  2. Cut into 2-inch batons about 1/2 inch wide, halving or quartering thick sections.
  3. Toss with oil, salt and pepper. Arrange in a mostly single layer.
  4. Air fry for 8 minutes. Shake, then cook 4 to 7 minutes more until the widest piece is almost tender.
  5. Whisk melted butter, honey and garlic powder. Toss the hot carrots with a thin coating, leaving excess glaze in the bowl.
  6. Return to the basket at 360°F for 2 to 4 minutes, shaking once, until glazed and easily pierced.
  7. Transfer from the hot basket, toss with lemon juice and parsley, and serve.

Notes

  • Keep carrot batons about 1/2 inch wide so they finish together.
  • Add honey-garlic glaze only when the widest piece is almost tender.
  • Use garlic powder during air frying; fresh garlic is best infused gently and added after cooking.
