Ingredients

  • 1 1/2 cups rolled oats 135 grams
  • 1 cup cottage cheese
  • 3 large eggs
  • 1/4 cup milk
  • 1 tablespoon maple syrup
  • 1 tablespoon melted butter
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Equipment

  • Waffle iron
  • Wire rack

Method

  1. Heat the waffle iron fully and grease only as the manufacturer recommends.
  2. Blend oats into fine flour.
  3. Add cottage cheese, eggs, milk, maple, butter, baking powder, vanilla and salt; blend smooth.
  4. Rest 5 minutes, adding 1 tablespoon milk if batter becomes too thick.
  5. Add the manufacturer-recommended batter amount and cook until steam slows markedly.
  6. Move waffles to a wire rack rather than stacking; repeat.
