Ingredients

Salad
  • 2 pounds baby Yukon Gold potatoes halved into 1 1/2-inch pieces, 900 grams
  • 1 tablespoon kosher salt for cooking water
  • 1 pound fresh green beans trimmed and cut into 2-inch pieces, 454 grams
  • 1/2 cup red onion thinly sliced, 70 grams
  • 1/2 cup flat-leaf parsley chopped, 20 grams
  • 1/4 cup fresh dill chopped, 10 grams
  • 2 tablespoons capers drained, 18 grams
Herb vinaigrette
  • 3 tablespoons red wine vinegar 45 grams
  • 1 tablespoon fresh lemon juice 15 grams
  • 1 tablespoon Dijon mustard 15 grams
  • 1 small garlic clove finely grated
  • 1 teaspoon honey or maple syrup 7 grams
  • 1/2 cup extra-virgin olive oil 108 grams
  • 3/4 teaspoon fine salt plus more after tasting
  • 1/2 teaspoon black pepper

Equipment

  • Large pot
  • Spider or slotted spoon
  • Large ice-water bowl
  • Colander
  • Clean kitchen towels
  • Large mixing bowl
  • Whisk
  • Broad silicone spatula

Method

  1. Fill a large bowl halfway with ice and cold water; set a colander and clean towels nearby.
  2. Cover potato pieces with cold water by 1 inch, add kosher salt, bring to a boil and lower to a steady simmer.
  3. Simmer 12 to 18 minutes, checking at 10, until a thin knife enters with slight resistance and pieces stay intact.
  4. Lift potatoes into a mixing bowl, keep cooking water and return it to a full boil.
  5. Whisk vinegar, lemon, Dijon, garlic, honey, fine salt and pepper, then stream in olive oil.
  6. Pour half the vinaigrette over hot potatoes, add onion, fold gently and cool uncovered 15 minutes.
  7. Boil green beans 3 to 5 minutes, beginning checks at 3, until crisp-tender without a raw center.
  8. Move beans to ice water for 2 minutes, drain and blot thoroughly on towels.
  9. Fold dry beans, herbs, capers and remaining vinaigrette into warm, non-steaming potatoes.
  10. Rest 20 minutes, taste potato and bean together, then adjust vinegar by the teaspoon or salt by a pinch.

  • Dress potatoes while hot and cool 15 minutes.
