Ingredients

  • 1 cup all-purpose flour 120 grams
  • 2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon fine salt
  • 3/4 cup milk 180 grams
  • 1 large egg
  • 2 tablespoons melted butter plus more for pans
  • 1 teaspoon vanilla extract

Equipment

  • Air fryer
  • Two 4-inch oven-safe cake pans or silicone molds
  • Mixing bowls
  • Whisk

Method

  1. Preheat the air fryer to 320°F for 3 minutes. Butter two shallow 4-inch pans.
  2. Whisk flour, baking powder, sugar and salt until evenly combined.
  3. Whisk milk, egg, melted butter and vanilla in a second bowl.
  4. Fold wet into dry just until no large flour pockets remain. Small lumps are fine; rest 5 minutes.
  5. Divide about 1/3 cup batter between the pans, keeping batter around 1/2 inch deep. Air fry 6 to 8 minutes.
  6. Turn pancakes out when the top springs back and the center is set. Re-butter pans and repeat with remaining batter.
