Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup cooked chopped spinach squeezed dry
  • 1/3 cup finely diced roasted red pepper drained
  • 2 tablespoons sliced scallions
  • 1/2 cup shredded cheddar or feta divided
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon olive oil for the pan

Equipment

  • Air fryer
  • 7-inch heat-safe round pan
  • Whisk
  • Silicone spatula

Method

  1. Oil a 7-inch heat-safe pan and confirm there is space around it in the basket.
  2. Preheat the air fryer to 320°F for 3 minutes.
  3. Whisk eggs, milk, salt and pepper. Fold in spinach, pepper, scallions and half the cheese.
  4. Pour into the pan and scatter the remaining cheese over the top.
  5. Air fry 10 minutes. Rotate the pan if your fryer has a strong hot spot, then cook 3 to 6 minutes more.
  6. Remove when the center is set with a slight spring and reaches a safe egg temperature. Rest 5 minutes before slicing.
