Ingredients

  • 14 ounces extra-firm tofu drained
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon unsweetened plant milk or water
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 cup cornstarch
  • 3/4 cup panko breadcrumbs
  • 1 tablespoon neutral oil or measured oil spray

Equipment

  • Air fryer
  • Three shallow bowls
  • Clean kitchen towel
  • Tongs

Method

  1. Wrap drained tofu in a clean towel and press under a cutting board and medium skillet for 15 minutes.
  2. Cut or tear into 24 roughly 1-inch pieces and blot dry.
  3. Place cornstarch in one bowl, whisk soy sauce, plant milk, Dijon and seasonings in a second, and place panko in a third.
  4. Coat each piece lightly in cornstarch, wet mixture and then panko, allowing excess to fall away between stages.
  5. Preheat to 390°F if recommended, oil the basket and arrange nuggets in one spaced layer; mist tops with oil.
  6. Cook 11 minutes, turn, mist dry patches and cook 3 to 5 minutes longer until deeply golden and crisp.
  7. Rest on a rack or open plate for 2 minutes before serving.

Notes

  • Use extra-firm, not soft or silken, tofu.
  • Cook in batches rather than crowding the basket.
  • Use tamari and certified gluten-free crumbs if required.
  • Keep dipping sauce separate until serving.
  • Contains soy and wheat unless substitutions are used.
