Crispy Air Fryer Salmon Patties Recipe

Ingredients
  

  • 2 14.75-ounce cans salmon drained well; skin and large bones removed if desired
  • 1 cup panko breadcrumbs divided
  • 1 large egg
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 green onions thinly sliced
  • 2 tablespoons chopped fresh parsley or dill
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon seafood seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil or avocado oil
  • lemon wedges and dipping sauce optional, for serving

Equipment

  • Instant-read thermometer

Method
 

  1. Drain the salmon thoroughly, remove skin and large bones if desired and flake it into a bowl.
  2. Whisk egg, mayonnaise, Dijon, lemon, seasonings, green onions and herbs. Fold into the salmon with 3/4 cup panko.
  3. Rest for 10 minutes, adjust only if needed, then shape eight 1/2-inch patties and coat them with the remaining panko.
  4. Preheat the air fryer to 390°F if recommended. Oil the basket and patties lightly.
  5. Arrange four patties in one layer and cook for 5 minutes.
  6. Turn gently and cook for 4 to 6 minutes longer, until crisp and at least 160°F in the center.
  7. Rest for 2 minutes and serve with lemon and desired sauce.

Notes

  • Drain the salmon thoroughly and rest the mixture before adjusting.
  • Chill fragile shaped patties for 15 minutes.
  • Cook four at a time without crowding.
