Crispy Air Fryer Lemon Pepper Wings Recipe

Dry-seasoned chicken wings rendered at moderate heat, crisped at high heat and tossed with bright lemon-pepper butter.

Ingredients
  

  • 2 pounds chicken wings split into flats and drumettes, tips removed
  • 1 tablespoon aluminum-free baking powder not baking soda
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 teaspoons salt-free lemon pepper seasoning divided
  • 3/4 teaspoon Diamond Crystal kosher salt or 1/2 teaspoon fine salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • chopped parsley and lemon wedges optional, for serving

Method
 

  1. Pat the wings very dry. Preheat the air fryer to 360°F if recommended.
  2. Mix baking powder, garlic, onion, 1 teaspoon lemon pepper, salt and black pepper. Toss with the wings in a thin coating.
  3. Place the wings in one uncrowded layer.
  4. Cook at 360°F for 12 minutes. Turn and cook for 10 minutes more.
  5. Increase to 400°F, turn and cook for 5 to 8 minutes, until crisp and at least 165°F.
  6. Stir melted butter, lemon juice, zest and remaining lemon pepper.
  7. Toss safely cooked wings lightly with the butter and serve immediately.

Notes

  • Use baking powder, never baking soda.
  • Dry the wings and cook in one layer.
  • Add lemon butter only after cooking.
