Ingredients

  • 1 cup 4% small-curd cottage cheese
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper

Equipment

  • Air fryer
  • Air-fryer-safe flat silicone liner
  • Fine-mesh sieve
  • Wire rack

Method

  1. Drain cottage cheese in a cloth-lined fine sieve for 20 minutes, pressing gently once.
  2. Combine drained cottage cheese, Parmesan, Italian seasoning and pepper; mash any large curds.
  3. Place a manufacturer-approved flat silicone liner in the cold basket; do not preheat it empty.
  4. Spoon six level tablespoons onto the liner and flatten into even 2 1/2-inch circles with 1-inch gaps.
  5. Cook at 330°F for 13 minutes, then 2 to 5 minutes longer until golden across the centers and deeper at the edges.
  6. Rest on the liner 2 minutes, move to a rack and cool 5 to 8 minutes before judging crispness.
  7. Cook the remaining mixture, checking a fully heated second batch 1 to 2 minutes early.

Notes

  • Drain free whey for 20 minutes.
  • Use only a manufacturer-approved air-fryer liner.
  • Do not preheat an empty loose liner.
  • Judge crispness only after the chips cool.
  • Contains milk.
