Ingredients

  • 2 cups plain 2% Greek yogurt 480 grams
  • 2 cups 2% milk 480 grams
  • 3/4 cup chia seeds 144 grams
  • 1/4 cup pure maple syrup 80 grams
  • 2 teaspoons vanilla extract 10 milliliters
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine salt
  • 2 cups berries 300 grams
  • 1/4 cup pistachios or almonds chopped, optional, 30 grams

Equipment

  • Large mixing bowl
  • Whisk
  • Silicone spatula
  • Four 16-ounce containers with lids

Method

  1. Whisk Greek yogurt, milk, maple syrup, vanilla, cinnamon and salt for 45 to 60 seconds until smooth and pourable.
  2. Whisk continuously while sprinkling chia seeds slowly and widely over the surface instead of dumping them in one spot.
  3. Rest 5 minutes, then whisk thoroughly and scrape the bottom, pressing apart any small clusters.
  4. Rest 10 more minutes and stir again; the mixture should be thicker but still pourable.
  5. Divide among four clean containers, cover immediately and refrigerate at 40°F or below for at least 4 hours.
  6. Stir from the bottom, add milk 1 tablespoon at a time if too firm, and top with berries and optional nuts.

Notes

  • Whisk yogurt and milk completely smooth before adding chia.
  • Sprinkle chia gradually while whisking.
  • Stir again after 5 minutes and after 15 minutes.
  • Wait for the full 4-hour chill before making a large texture correction.
  • Keep at 40°F or below and use within 4 days.
  • Contains milk; optional pistachios or almonds are tree nuts.
