Ingredients
  

  • 3 cups cooked chicken chilled and cut or shredded into 1/2-inch pieces
  • 3/4 cup plain whole-milk Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon lemon zest finely grated
  • 1 tablespoon fresh lemon juice
  • 3/4 teaspoon kosher salt plus more to taste
  • 1/4 teaspoon black pepper
  • 2 ribs celery finely diced and patted dry
  • 1 cup seedless red grapes quartered and patted dry
  • 3 scallions thinly sliced
  • 1/4 cup flat-leaf parsley chopped
  • 2 tablespoons fresh dill chopped
  • 1/3 cup sliced almonds toasted and cooled

Method
 

  1. Use fully cooked cold chicken. Cut or pull into 1/2-inch pieces and blot the surface if wet.
  2. Dice and dry celery, quarter and dry grapes, and slice scallions. Chop herbs.
  3. Toast almonds in a dry skillet over medium-low heat for 3 to 5 minutes until fragrant. Transfer to a plate and cool.
  4. Whisk Greek yogurt, olive oil, Dijon, honey, lemon zest, lemon juice, salt and pepper until glossy and uniform.
  5. Add chicken, celery, grapes, scallions, parsley and dill. Fold gently until evenly coated without crushing grapes.
  6. If dry, add Greek yogurt 1 tablespoon at a time. If too tangy, add 1/2 teaspoon honey or 1 teaspoon olive oil.
  7. Cover and refrigerate 20 minutes, then stir and check seasoning and consistency.
  8. Fold in cooled toasted almonds just before serving, or add them to individual portions for the best crunch.

Notes

  • Cool the cooked chicken completely before mixing.
  • Dry celery and grapes carefully to limit watery dressing.
  • Use plain whole-milk Greek yogurt for the creamiest result.
  • Count storage time from the day the chicken was originally cooked.
