Ingredients
  

  • 1 medium crisp apple about 180 grams before coring
  • 1 teaspoon fresh lemon juice
  • 1 cup old-fashioned rolled oats 90 grams
  • 1 cup milk 240 grams, dairy or unsweetened nondairy
  • 1/2 cup plain Greek yogurt 120 grams
  • 2 tablespoons chia seeds 24 grams
  • 2 tablespoons pure maple syrup 40 grams
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon fine salt
  • 2 tablespoons chopped walnuts optional

Equipment

  • Two 16-ounce jars or covered containers
  • Small covered container for apple topping
  • Medium mixing bowl
  • Whisk
  • Spoon or silicone spatula

Method
 

  1. Set out two clean 16-ounce jars and one small covered container for the crisp apple topping.
  2. Core the washed apple. Cut half into 1/4-inch dice and half into 3/8-inch topping pieces. Toss with lemon juice; reserve the larger pieces in the small container and divide fine dice between jars.
  3. Whisk milk, Greek yogurt, maple syrup, vanilla, cinnamon and salt in a medium bowl until smooth.
  4. Stir in rolled oats and chia until every oat is coated, then divide evenly between the two jars and distribute the fine apple dice.
  5. Rest open jars for 10 minutes, then stir thoroughly from the bottom to redistribute settling chia and liquid.
  6. Cover the jars and apple topping. Refrigerate at 40°F or below for at least 6 hours and up to overnight.
  7. Stir each jar in the morning. Add 1 tablespoon milk for a looser texture; if liquid pools, stir and wait 2 minutes before correcting.
  8. Top with the separately chilled apple pieces and optional walnuts immediately before serving.

Notes

  • Use old-fashioned rolled oats for a creamy but structured texture.
  • Stir once after mixing and again after a 10-minute rest.
  • Keep half the apple in larger pieces and refrigerate it separately for crunch.
  • Add morning milk by the tablespoon; oat and chia absorption vary.
