Cranberry Bread Recipe

Ingredients
  

  • 2 cups all-purpose flour 240 grams, divided
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup granulated sugar plus 1 tablespoon for topping
  • 1 tablespoon finely grated orange zest
  • 2 large eggs room temperature
  • 1/2 cup plain Greek yogurt
  • 1/2 cup neutral oil
  • 1/3 cup fresh orange juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen cranberries large berries halved; do not thaw frozen

Method
 

  1. Heat the oven to 350°F. Grease a 9-by-5-inch metal loaf pan and add a parchment sling.
  2. Whisk all but 1 tablespoon flour with baking powder, baking soda and salt.
  3. Rub orange zest into 3/4 cup sugar with fingertips until fragrant, then whisk in eggs, yogurt, oil, orange juice and vanilla.
  4. Fold dry ingredients into wet until a few flour streaks remain. Toss cranberries with reserved flour and fold them in gently.
  5. Spread in the pan, sprinkle with remaining sugar and bake 55 to 68 minutes. Tent loosely with foil if the top browns before the center sets.
  6. Test two center cake areas, avoiding a cranberry pocket; moist crumbs are fine, wet batter is not. Cool 15 minutes in the pan and at least 15 minutes on a rack.
