Ingredients

  • 2 cups all-purpose flour 240 grams, spooned and leveled
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon fine salt
  • 2 large eggs room temperature
  • 3/4 cup packed light brown sugar
  • 1/2 cup plain Greek yogurt
  • 1/2 cup neutral oil
  • 1 teaspoon vanilla extract
  • 3 cups peeled diced apples 1/2-inch pieces
  • 2 tablespoons coarse sugar optional topping

Equipment

  • 9-inch square baking pan
  • Two mixing bowls
  • Flexible spatula
  • Wire cooling rack

Method

  1. Heat the oven to 350°F. Grease a 9-inch square pan and line the bottom with parchment, leaving two handles.
  2. Whisk flour, baking powder, baking soda, cinnamon and salt until no leavening lumps remain.
  3. In a second bowl, whisk eggs and brown sugar for 45 seconds, then whisk in yogurt, oil and vanilla.
  4. Fold dry ingredients into wet until a few flour streaks remain. Add apples and fold only until the batter is even.
  5. Spread in the pan, level the top and add optional coarse sugar. Bake 40 to 50 minutes, rotating once after 30 minutes.
  6. A tester inserted into a cake area should show moist crumbs, not wet batter. Cool 20 minutes in the pan, then lift out and cool at least 10 minutes more.
